Cobra Chilli Congo B Pepper Sauce
I approached Vaughn from Cobra Chilli after reading a review on their products and recent expansion into the USA. He sent me through some samples and in our first tasting party the Congo B was a stand out to feature in our first ChilliBOM box.
Straight away you see pieces of Congo Black chilli and chilli seeds in the sauce and you can definitely smell the chilli coming through. The vinegar is does not overpower the flavour which definitely comes from the Congo Black chillies and their very distinctive fruitiness. The heat is felt mostly at the back of the throat and does linger for a couple of minutes.
This is a simply made sauce with only three ingredients but it definitely has a complexity of flavour that makes for an enjoyable sauce. Perfect for eggs, pizza and pasta.
