Fattoush Fire Salad

Serves 4
Prep time 15 minutes

Salad

2-3 tbs Olive Oil

3 loaves Lebanese Bread

½ head iceburg lettuce, shredded or slices

2 radishes, sliced

2 tomatos, cut into wedges

3 Lebanese cucumbers, sliced

½ tsp Sumac

Dressing

2 tbs olive Oil

2 tbs The Chilli Chick Shop Raspberry Pomegranate Miso Hot Sauce

Juice from 1 lemon

1 tsp Pomegranate molasses

½ teaspoon Sumac

Salt to taste

 

  • Lightly brush bread with olive oil. Put 1 loaf in the microwave on a plate, cook for 1 minute, turn over and cook for a further minute, repeat for each loaf. Allow too cool.
  • Cut vegetables and place into salad bowl. Break bread into small pieces & add to bowl.
  • For the dressing, combine all ingredients into a small bowl and whisk
  • Pour dressing over assembled salad, sprinkle with sumac and serve alongside your favourite lamb dish.
