Fire Dragon Chillies Xtra Hot Chilli Sauce hails from Aotearoa on the North Island in NZ and is made from some of the hottest chillies on the planet including Scotch Bonnets, habaneros, ghost chilli, 7 Pots and Moruga Scorpions...and Clint from Fire Dragon Chillies assures me that they are all yellow of course!
The heat in this sauce is intense and delivered very quickly by the cider vinegar which kicks in to give that very distinctive old style hot sauce sharpness.
All this yellow as well as the lemon, lime and vinegar make Xtra Hot Chilli Sauce the perfect dipping sauce for seafood but this would also be at home on a chicken burger. I hadn't really tried anything this hot on Oysters before and I wasn't disappointed, the heat and sharpness of the sauce complemented the creamy and salty oysters perfectly.
