This is one of our favourites at ChilliBOM and we have wanted to get this into the Red Box for a long time now, but have not had the opportunity because we weren't able to get it in smaller bottles, but lucky for all of us that Bondamajak now comes in a "mini" bottle. Bondamanjak is the French West Indies name for the Scotch Bonnet, a key ingredient in Caribbean cooking, and it’s the standout part of this sauce with a heat that is intense and helps to add another dimension to your food without overpowering it. This sauce has the consistency of tomato sauce and tastes like a spicier, tangier version of a Thousand Island dressing...but it's a 1000 times better! The heat from the Scotch Bonnet is sharp and peppery in the middle of your mouth and then travels to the back of your throat.
I use this in place of mayonnaise and it makes a great salad dressing, I have even used it as a marinade for chicken and fish, it's just so versatile!
