The chamber temperature drops to around -40C. The shelves are heated, vaporising moisture. This is extracted by a vacuum pump, bypassing the melting stage.
This drying technique can remove up to 98% of moisture, leaving food light and crunchy, simple to powder or rehydrate.
Provided the food is kept air tight, freeze dried foods can last for years. Great for out of season availability and the next best thing to fresh.
