Dingo Sauce Co make a range of Sriracha sauces and this is considered the base level sauce on which all others are created. I like it because it is sriracha made simple - just a few ingredients used very well. That pared down style actually gives this sauce some depth and complexity and you can appreciate the role of every ingredient with a perfect balance between each and just a hint of garlic at the end.
I haven't managed to sneak this one into Yum Cha yet, but it will be tucked under the jumper the next time I do, as those prawn dumplings are screaming out for this sauce - in the meantime my morning fried eggs are getting a good drenching.
