This is balanced with a complexity and sweetness of the dried onion and date syrup marrying perfectly with the fruitier flavours of both habanero and Carolina Reaper. The addition of Sichuan Pepper to this sauce is a master stroke providing both a peppery finish as well as that characteristic numbness on the lips and tip of the tongue....that's maybe why the chilli heat dives straight to the back of your throat..

DC Cartel The Original 1983 Crispy Chilli Oil - VIC

Dulcie's Grandsons have hijacked their grandmother's recipe, put it in a jar and stuck a label on it, but you will be sure glad they did. This crunchy chilli oil is bursting with the taste of deep fried shallots and garlic and is finished off with the distinctive overtones of fennel and the zingy tingle that only Szechuan pepper can give you. There is a mix of chillies, dried and chopped, in the jar that provide a nice consistent warmth right across the mouth and a couple whole chillies added in for some extra bite.

Sabarac Japanese Miso Fermented Hot Sauce - QLD

This fermented hot sauce has a very distinctive Japanese flavour with daikon, rice wine vinegar and mirin and all of this is further enhanced by the red fava bean Miso which is locally sourced. The heat from the birdseye chilli is upfront and intense and you even get to crunch on the chilli seeds.
