Crispy Hot Wings

Serves 6
Cooking time 45 minutes

2 kgs chicken drumettes or wingettes

125g plain flour

1 tbs baking powder

125ml hot sauce (plus extra for dipping)

80g butter

1 tbs honey or brown sugar

 

  • Rinse and dry chicken thoroughly with paper towel.
  • In a bowl add the flour, baking powder and season with some salt and pepper. Coat chicken with flour mixture, place on baking tray lined with baking paper and refrigerate uncovered for at least an hour. Preheat oven to 180°C.
  • Bake chicken for 20-30 minutes until skin is golden and bubbly.
  • In a separate saucepan melt the butter then add in hot sauce and honey, heat until the sauce starts to bubble. Remove from heat.
  • Put the cooked chicken into a clean bowl, pour the sauce over the chicken and toss to coat well.
  • Place chicken back on the baking tray and bake for a further 15 minutes.
  • Serve immediately with extra hot sauce
