Old Bones Scrambled Eggs

Serves 2
Prep time 10 minutes
Cooking time 5-6 minutes

2 bagels, halved

1 large zucchini

2 cloves garlic, diced

2 - 3 sprigs of thyme

3 tbsps olive oil

4 eggs

  1. Cut bagels in half. Cut ends off the zucchini, using a vegetable peeler, peel into ribbons. Place into a bowl with garlic slices, thyme, 2 tbsps of the olive oil and season with sea salt & cracked pepper.
  2. Heat a frypan pan up to medium high, add in zucchini and cook for 2-3 minutes till softened and slightly golden. Remove and set aside. Wipe pan clean and heat remaining olive oil.
  3. Crack eggs into a small bowl. Whisk with a fork to break them up and pour into the pan. Gently push the eggs around the pan till they are set .  
  4. Toast bagels and top with zucchini mix, eggs and a generous drizzle of OLD BONES SMOKED GARLIC CHILLI SAUCE.
