Tasting Note

The native Tasmanian “Diemen” Pepper is fruiter and five times stronger than normal black pepper but also gives the sauce a definite overall earthiness of flavour. Compared to the Diemen's original sauce the ratio of habanero has been dialled up helping to raise the overall heat and leaves you with that distinctive habanero after-burn that is helped along by the Diemen peppers unique lasting burn. You can see the pepper in the sauce and straight away you can smell the combination of chilli and vinegar that promises a certain zing, with the flavour profile closer to a Louisiana style hot sauce. - Rodney@ChilliBOM
