Fang's Chilli Sauce is a perfect example of modern Australian fusion cuisine all wrapped up in a hot sauce. Created by Chef Clinton Fang Yuen this sauce has a moreish quality, it is a chunky salsa/Asian style sauce with visible ingredients that you can feel in your mouth which only adds to its appeal. Many of the ingredients are sourced locally in Cairns and the nearby Atherton tablelands. In terms of heat it is a nice, even heat that lingers right across the mouth, enough to warm you up, without the need to stop and quench the fire.
This sauce has been deigned to be universal and can be used as a table sauce or as a marinade across many dishes, you could even give it a go as a salad dressing
