Pepper by Pinard Caribbean Reaper Hot Sauce is a flavour-packed journey to the Caribbean with the added bonus of Carolina Reaper lingering heat.
The base ingredient in this hot sauce is a pickled vegetable medley of cauliflower, cucumber, and onion which, on the face of it sounds a bit strange, but incredibly, provides a fantastic platform on which to create a delicious hot sauce flavour. The cauliflower gives the sauce its texture, the cucumber delivers freshness and the onion some sweetness. Mixed in with this is a very subtle punch of mustard, to give the sauce its signature Caribbean style, as well as the tartness and zing of green tomatoes and lime with a tasty garlic finish. Carolina Reaper ties this all together and provides some fruitiness, while also delivering its signature delayed lingering burn.
This is amazing on white meats and fish, you could also combine with some sour cream to create an amazing dip, but my favourite is as a spread on your bread in a cheese and ham toastie...with a pickle on the side!
