Tasting Note

This hot sauce takes full advantage of the flavour from the fermentation process. The habanero and cayenne chillies are mashed, blended with garlic, and then fermented for a minimum of four weeks. This ferment has a tangy slightly sour profile that by itself is bursting with flavour, but it's then mixed with apple cider vinegar to give it a brilliant complexity and depth of flavour.
