Tasting Note

When I saw peri-peri on the label my first thought was that this sauce would have those lemon-tangy flavours that you typically expect, but the distinctive list of ingredients take this to another level. The sauce starts with the delicious sour/sweet flavours of blood plum, then adds in the fermented flavours of Korean Gochujang, the sweetness from currants and finished with the peppery spiciness and heat of peri-peri chillies. So what you actually end up with is something completely different, more like an Asian style plum sauce, without the sweetness, to let the other flavours shine through. - Rodney@ChilliBOM
