Dingo Sauce Co. Chilli Jam is a Thai style chilli paste that has been slow cooked for over ten hours and designed to deliver maximum flavour.
This is not an ordinary Western style sweet Chilli Jam that you may be accustomed to. Let's call this a savoury "jam" made using shrimp paste and fish sauce and if you are fan of this distinctive style of sauce then you are going to fall in love with this. In texture this sauce is more like a paste than a jam with a thick saucy texture. The tamarind adds a nice level of sweetness and depth, but the star is the shrimp paste. Made with Caysan chillies overall the sauce is on the milder side but what it lacks in heat it over-delivers on in flavour
Add this to a wonton soup or as a dipping sauce for some fried dumplings or money bags.
