Leigh is a master sriracha maker who has taken the humble sriracha sauce and re-imagined them into something new; the Dingo Sauce Co Super Hot Sriracha is one of these. Leigh makes the fermented base using red jalapeños and caysan, like he does for his other sriracha sauces but later on in the creation process he adds a little kicker of ghost pepper and scorpion chillies to really ramp up the heat. If you ever wanted to taste an extremely hot version of your favourite sriracha sauce then this one is for you.
This sauce works well on a stir-fried noodle dishes but for me this is perfect (sparingly) as a sipping sauce for fried dim sums.
