This sauce is a family recipe that has been perfected over the years and is inspired by the Balkan region chilli relish known as Ajvar which is a capsicum, chilli and garlic relish. The roasted capsicum is the standout ingredient providing a rich consistency and full flavour and if you look closely, you will see some of the charred skin of the capsicum in the sauce. This has been expertly balanced with the sweetness of onion and acidity of natural lime juice and you can't forget the habanero which perfectly complements the capsicum, and which has been masterfully used, harnessing their full flavour and providing a solid heat that is delivered throughout the whole mouth.
This is definitely an all-rounder hot sauce but I especially love this on grilled chicken give it a try drizzled on a chicken and vegetable kebab with capsicum and onion.
