Chinchilli Smoked Habanero Chilli Sauce
Another great example of some of the fine sauces that are getting created within Australia, this one from Ballogie in Queensland about 3 hours inland from the Sunshine Coast made with chillies grown locally.
The smoky aroma of this sauce is heavenly, not too overpowering and definitely not artificial, this is nicely coupled with the sweetness from the capsicum.
It is a very thick and chunky sauce with visible seeds and pulp. The sweetness of the capsicum carries through to the taste and again is nicely balanced with the smokiness, which is not overpowering and enhances the overall flavour. This sauce is not for the feint-hearted when it comes to heat, with 38% habanero the heat is intense and it sticks around.
The smokiness and heat make this is a sure-fire hit (pun intended) for a steak or a burger!
