Diablo Sunrise Ghost Hot Sauce
I first discovered Diablo Sunrise at the inaugural Sydney Chilli Festival in Parramatta in September 2018. I had already been "killed" that morning by a super hot Butch T sauce so I couldn't even taste the sauces, or anything else, that day (I know I'm a wimp right!)
But I caught up with Mike a few weeks later and he took me through his Mexican inspired range, with a verde, ghost, habanero and sriracha to try. While all the sauces were great the Ghost hot sauce immediately stood out and had to be part of the ChilliBOM Red Box.
I am a big fan of hot sauces made with Bhut Jolokia aka Ghost chilli. They have an earthy, fruity flavour with a heat that hits you twice once as a sharp upfront heat then a second time with a lingering back-of-the-throat heat. Mike has brought the best of the ghost chilli to this sauce. The ghost chilli is the first thing you smell when you open the bottle and also the first thing you taste. This is followed by a white onion sweetness along with a subtle tropical hit from the passionfruit and lime.
The obvious food choice to use this with is Mexican, but it is also great with grilled chicken straight up or as a burger.
