Diemen's The Original Hot Sauce
I discovered this sauce many years ago in a little café in Richmond, Victoria where I had met some friends for breakfast. The Diemen's Original and Diemen's Stinger Sauces were sitting on every table and there was no way they were not going to be slathered all over my omelette. I later discovered that the café I visited is not very far away from where this fabulous sauce is made. After sadly disappearing off our shelves in 2019, the brand has made a come back in late 2020 and it just had to feature again in the ChilliBOM Red Box. The Diemen's Stinger sauce appeared in the very first Red Box in 2016
This hot sauce gets it uniqueness from the addition of the native Tasmanian “Diemen” Pepper that is fruiter in flavour and is five times stronger than normal black pepper.
You can see the ground pepper in the sauce and straight away you can smell the combination of chilli and vinegar that promises a certain zing more like a Louisiana style hot sauce. You get an initial upfront heat that does fade quickly but the heat will build the more you eat. There is a lemony flavour punch from the vinegar but there is also a definite earthiness that is delivered by the Diemen pepper.
This sauce is perfect slathered over a dozen fresh oysters accompanied with a cold beer. But it is also great for eggs and pizza.
