Diemen's Stinger Hot Sauce
I discovered this sauce in a little café in Richmond, Victoria where I had arrived for breakfast. The Diemen's Original and Diemen's Stinger Sauces were sitting on every table and there was no way they were not going to be slathered all over my omelette. I later discovered that the café I visited is not very far away from where this fabulous sauce is made.
This hot sauce gets it uniqueness from the addition of the native Tasmanian “Diemen” Pepper that is fruiter in flavour and is five times stronger than normal black pepper.
You can see the ground pepper in the sauce and straight away you can smell the combination or chilli and vinegar that promises a certain zing more like a Louisiana style hot sauce. You get a consistent and even heat across the tongue, there is a flavour punch from the vinegar when you eat it but there is also a definite earthiness that is delivered by the Diemen pepper.
This sauce for me is the perfect breakfast sauce; eggs, avocado and bacon but also does fine on your favourite pizza and pasta.
