Sabarac Fermented Hot Chocolate Sauce
Geoff from Sabarac has combined the Chocolate Bhut Jolokia and Red Savina Habanero chilli with strawberry, rice malt syrup, cocoa and cinnamon to create a hot sauce with uniqueness and decadence. There is no missing the sweet, sweet smell of chocolate laced with hints of strawberry. The earthy flavour of the chilli is first to come through, followed by the delicious cocoa and strawberry, which adds a whole new dimension of flavour. There is no added sugar, so all the sweetness is from the fruit and rice malt syrup, with the latter also giving the sauce its smooth and shiny finish. The chilli heat is not obvious at first but there is a subtle slow build up at the back of the throat and this intensifies the more you eat.
To use this sauce, you can keep it simple and just drizzle this over a big bowl of vanilla ice cream with some chopped nuts or make this amazing hot chocolate recipe
