Chris and Kosta specialise in fermentation, as their brand name kind of gives it away, with a very keen interest in fermented chillies and this is the first hot sauce that they ever launched and it epitomises, for me, the fermented hot sauce flavour profile, it just "dances" in your mouth, and takes full advantage of the flavour from the fermentation process. The habanero and cayenne chillies are mashed, blended with garlic, and then fermented for a minimum of four weeks. This ferment has a tangy slightly sour profile that by itself full of flavour, but it's then mixed with apple cider vinegar to give it a brilliant complexity and depth. Capsicum, ginger and onion are also added to create another dimension to the overall flavour profile.
As the name hints at, this is a great all-rounder hot sauce perfect on eggs, pasta or sneaking onto a sandwich at lunchtime.
