The "Traffic Light" Edition
The ‘traffic light’ edition Red Box is a tribute to the diversity of hot sauce - the many styles, chillies, ingredients and colours that make up this spicy world. The box features an old-school Jamaican hot sauce, a passionfruit based Mexican-style hot sauce and the unlikely, but delicious, modern pairing of kiwifruit and habanero.
Walkerswood Jamaican Firestick Pepper Sauce (St Ann, Jamaica)
Chilli: West Indian red Chilli aka Caribbean Red Chilli
This hot sauce is best described in just a few words “Hot, tangy with a little sweet”. There is a great balance between the heat from the chilli, the sweet from the cane sugar and the sour tang from the vinegar that gives this sauce a timeless flavour. The chillies used are the local West Indian Red Chilli which are a rarer variety of chilli originating from Antigua and Barbados. Before my deep dive into the world of hot sauce the flavour profile of this sauce was what defined hot sauce for me, and I find I sometimes can’t help but keep going back to it. After habanero based hot sauces, I am a big fan of hot sauces made with the Bhut Jolokia. They have an earthy fruity flavour with a heat that is slightly sharper than the habanero but that likes to linger at the back of the throat similar to habanero. Mike from Diablo Sunrise has brought the best of the ghost chilli to this Mexican style sauce. The ghost chilli is the first thing you smell when you open the bottle and also the first thing you taste followed by a white onion sweetness mixed with a subtle tropical hit from the passionfruit and lime. I have been sharing this sauce with friends for a few years now and the first reaction anyone ever has to this sauce is a perplexed look followed by exclaiming "Kiwifruit hot sauce" then there is an eagerness to try that, luckily, does not disappoint! The kiwifruit gives this sauce a really fresh and unique fruity aroma and flavour and when its combined with the even, and lingering, heat of the habanero you have a perfect match…this bottle will be empty in no-time.
